Tropical Christmas Recipes

Coconut Mango Chia Pudding

Ingredients:
– 1/2 cup chia seeds
– 2 cups coconut milk
– 2 ripe mangoes, peeled and diced
– 2 tablespoons honey
– 1/4 teaspoon cardamom powder

Instructions:
– Soak chia seeds in coconut milk overnight in the refrigerator.
– Blend one mango with honey and cardamom until smooth.
– Layer the chia pudding with mango puree and top with diced mango. Serve chilled.

Grilled Pineapple and Papaya Salad

Ingredients:
– 1 pineapple, peeled and sliced
– 1 papaya, peeled, seeded, and cubed
– Juice of 2 limes
– 1/4 cup fresh mint leaves, chopped
– 1/2 teaspoon black salt

Instructions:
– Grill pineapple slices on a hot grill until caramelized.
– Toss grilled pineapple with papaya cubes, lime juice, mint, and black salt. Serve fresh.

Spiced Coconut Lentil Soup

Ingredients:
– 1 cup red lentils
– 1 can (400 ml) coconut milk
– 1 tablespoon fresh ginger, grated
– 1 teaspoon turmeric powder
– 1 teaspoon cumin seeds
– Salt to taste
– 1/4 cup fresh coriander, chopped

Instructions:
– Cook lentils in 4 cups of water with ginger, turmeric, and cumin until soft.
– Add coconut milk and simmer for 10 minutes. Season with salt.
– Garnish with fresh coriander before serving.

European Christmas Recipes

Warm Spiced Apple Cider

Ingredients:
– 1 liter apple cider
– 2 cinnamon sticks
– 4 cloves
– 2 star anise
– 1 orange, sliced

Instructions:
– Simmer apple cider with cinnamon, cloves, star anise, and orange slices for 20 minutes.
– Serve warm in mugs.

Roasted Root Vegetable Medley

Ingredients:
– 2 carrots, peeled and chopped
– 2 parsnips, peeled and chopped
– 2 sweet potatoes, peeled and cubed
– 2 tablespoons olive oil
– 1 tablespoon fresh rosemary, chopped
– Salt and pepper to taste

Instructions:
– Preheat oven to 200°C (400°F).
– Toss vegetables with olive oil, rosemary, salt, and pepper.
– Spread on a baking sheet and roast for 30-40 minutes until tender and golden.

Chestnut and Mushroom Risotto

Ingredients:

    – 1 cup Arborio rice

     – 1 cup cooked chestnuts, chopped

     – 200 grams mushrooms, sliced

     – 4 cups vegetable broth

     – 1 tablespoon olive oil

     – 1 teaspoon fresh thyme leaves

     – Salt and pepper to taste

 Instructions:

     – Heat olive oil in a pan, sauté mushrooms and chestnuts until soft.

     – Add rice and stir for 2 minutes.

     – Gradually add broth, one cup at a time, stirring until absorbed.

     – Continue until rice is creamy and cooked. Season with thyme, salt, and pepper.
